We subscribe to an organic vegie box each week – my own vegie patch is not fully functioning but there are a few double ups. Each week I try to make a meal plan – it saves time & money & takes the stress out of thinking about dinner. This is my meal plan for the week starting on a Friday as we pick up the vegies on Thursdays.
A bit late but this is my plan for the week ahead:
Friday:
Lunch =
Dinner =
Saturday:
Lunch = Vegie Burgers with tomato & cucumber salad.
Dinner = Polpetti cooked in passata with gluten free fettuccine
Sunday:
Lunch = Zucchini Slice with cucumber, tomato & basil salad.
Dinner = Chilli con Carne (The 21-Day Wonder Diet – AWW – page 26).
Monday:
Lunch = Adults = Toasted Sandwiches – Salami, cheese & roquette.
Dinner = Tuna Patties with beans, broccoli & carrots.
Tuesday:
Lunch = Left over Tuna Patties & salad
Dinner = Pumpkin & Bacon Slice ( AWW – Brunches & Lunches – page 63).
Wednesday:
Lunch =Orange Roasted Kumara & Tuna Salad (The 21-Day Wonder Diet – AWW – page 34)
Dinner = Thai chicken san choy bau (Donna Hay – Off the Shelf – page 124)
Thursday:
Lunch =Potato, tuna & egg salad (The 21-Day Wonder Diet – AWW – page 25)
Dinner = Steak with left over vegies or salad
After doing my plan I still seem to have a significant shopping list but, the Vegie Box only costs about $30 per week so I think I am getting value for my money! The list gives me an idea of what I need to plant for next Spring/Summer and reminds me that I need to get the onion seeds started! I must also put an avocado or 3 on the tree wish list.
